One of the great things about being married is that you get to inherit all of your in-laws delicious family recipes like this one. I am super lucky and have an amazing MIL that is a really great cook and entertainer so trust me when I say these are good. We love making these on the weekends for breakfast and then you have leftovers for the rest of the week to grab quickly in the mornings when you're in a hurry. And I do think of them as a healthier muffin since they are made with bran, right?
| INGREDIENTS |
1 1/4 cups flour
1/2 cup sugar [you can also use a no-calorie sweetener like Truvia]
1 tablespoon baking powder
1/2 teaspoon salt
1 cup All Bran cereal
1 1/4 cups milk [you can also use unsweetened Soy Milk]
1 egg, beaten
1/3 cup oil
1/2 cup wheat germ
grated rind from 1/2 orange

Grease 16 muffin pan cups or use paper liners. Combine flour, sugar, baking powder and salt; set aside. Combine cereal and milk; let stand about 2 minutes to soften. Add egg and oil; beat well. Stir in wheat germ. Add flour mixture and stir just until mixture is combined. Stir in grated orange rind. Fill prepared muffin pan cups 2/3 full of batter. [you can also sprinkle some oats on top] Bake at 400 degrees for 25 minutes, or until muffins are golden brown. Makes 16 muffins. Enjoy!
