With all the rainy weather we had this past weekend I was just craving some of my favorite comfort food and that means some delicious grilled cheese and tomato soup. I found this recipe from Pinterest and it's a copy cat of the famous tomato soup from Paradise Bakery so you definitely need to try it out. We loved it and the leftovers have lasted for days. To make a really good gourmet grilled cheese sandwich you need to first start with some real nice artisan bread [we used the three cheese semolina bread from La Brea Bakery]. First I spread mayo on each slice then start layering the cheeses of sharp cheddar, swiss, and monterey jack on one slice of bread. On the other slice of bread I spread guacamole then sliced tomatoes and crispy bacon on top. Then close the sandwich up and grill it. We use our panini maker with butter spread before cooking.
Paradise Bakery Tomato Soup
| INGREDIENTS |
1/2 large onion [finely diced]
3 cloves garlic [minced]
1-2 tablespoons olive oil
1 [28 oz] can diced tomatoes
2 [14.5 oz] cans fire roasted tomatoes
1 [8 oz] can tomato sauce
1 [6 oz] can tomato paste
2 cups water
2 cups chicken broth
1 teaspoon salt
1/4 teaspoon pepper
1 cup heavy cream [milk will work too]
| INSTRUCTIONS |
1 | In a large pot, saute onion in olive oil until almost translucent. Add garlic and sauté' a couple minutes longer.
2 | Add tomatoes, tomato sauce, tomato paste, water and chicken broth to pot. Stir to combine and until it reaches a boil. Reduce heat, cover, and let simmer for 30 minutes.
3 | After it has boiled for 30 minutes, puree soup as necessary to reach desired consistency. [I use my vitamix to blend it up]
4 | Add salt, pepper and cream to pot with tomato soup and simmer for 10 additional minutes.
5 | To serve, drizzle with sour cream and top with tortilla chip strips.
